Vegan Tunah Open Sandwich

Welcome to my website, I will be recording (hopefully daily) recipes that I cook from scratch, most of these have been sourced from the internet/cook books but I have made it mine by substituting ingredients. I hope you also enjoy these recipes as much as I do..

I am not huge fan of tuna, but I bought this vegan tuna on a whim in my monthly grocery order and it has been sat on the shelf for a while. This morning I decided it was time to do something about it and this open sandwich is the result.

Prep Time: 15 mins

Cook Time : 0 (yes, no cooking involved!!!)

Ingredients:

  • 1/2 can of vegan tuna (I used Marigold Tuna)
  • 1/3 cup of grated Lancashire Cheese (any mild cheese will do)
  • 1/2 small onion (chopped)
  • 1 stalk of celery (chopped)
  • 2 tbsp of mayonnaise
  • 1 tsp of Worcestershire Sauce
  • juice of half a lemon
  • 1 tsp dried parsley
  • 1 tbsp capers
  • 4 slices of toasted white bread

Method:

Mix all the ingredients (except the bread) in a bowl till well combined.

Spread generously on the toasted white bread and serve immediately.
