
Ingredients:
- 1 cup basmati rice
- 1 packet sliced mushrooms
- 1/2 cup frozen peas
- Whole spices – 4 cardamoms, 6 pepper corns, 4 cloves, 1 inch cinnamon stick, 2 bay leaves
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 tsp chilly powder
- 1 tsp garam masala powder
- Salt to taste
- 1 1/2 cups water (boiling hot)
- 2 tbsp ghee
Method:
Place rice in a vessel and wash it couple of times till the water runs clear.
Cover it with water and let it soak for a minimum of 15 minutes.
Melt the ghee in a pan.
Add the cumin seeds and fry for 30 seconds
Add all the whole spices and fry for another 30 seconds
Add the mushroom and cook for a few minutes till it turn soft and then add the peas and cook for couple of minutes.
Add the chilly powder, turmeric powder and garam masala and mix well.
Discard the water and rice to the pan and mix well and fry for a couple of minutes.
Add the boiling water and bring to a boil for a couple of minutes.
Cover pan with a tight fitting lid and lower the flame to the minimum possible. Let it cook for 7 minutes.
After 7 minutes turn off the stove and let the Pulav sit for 15 minutes. Do not open the lid.
After 15 minutes has passed open the lid and gently fluff the rice.
Serve hot with raita.
