Prawn Curry and Rice

This is a simple prawn curry with delicate flavours, recipe provided by Leela Akka. It takes about 45 minutes to prepare this curry and rice from scratch and it tastes fabulous. A confession I forgot to add chilli powder and it was only when we sat down to eat that I discovered it, but my husband loved it as it is, so I a presenting it as is, you may want to add 1 tsp of chilli powder to increase the spice levels.

I find prepping a little in advance helps, especially the rice, if its soaked in water for over an hour, you will have fluffy rice, guaranteed!

Ingredients

For Prawn Curry:

  • 165 gms Prawn (I used M&S Honduran Prawn, the one you find in the stir-fry meal deal section)
  • 2 Onions (chopped finely)
  • 2 medium Tomatoes
  • 1 tsp Garlic paste
  • 1/s tsp Ginger powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Fennel seeds (crushed)
  • 1/2 tsp Turmeric powder
  • 1/4 cup Dessicated Coconut (dry roasted)
  • 1 tsp Ghee
  • 1/2 tsp Pepper powder
  • Oil
  • Salt
  • Coriander Leaves (chopped)

For Rice:

  • 1 cup Basmati Rice (soaked for about two hours)
  • Little less than 2 cups of boiling water
  • Salt

Method:

Wash the rice, till the water runs clear. Add to boiling water and bring to a boil. Cover and simmer on the lowest flame for seven minutes. Turn the gas off and let the rice rest for a minimum of 15 minutes. After 15 minutes fluff the rice.

Heat a little oil in a pan, add onion and fry till translucent.

Add the garlic paste and fry for about one minute.

Add turmeric powder, cumin powder, coriander powder, crushed fennel seeds and pepper powder and fry. If at any time it feels like the spices will burn add a little water, this will stop the spices from burning and help with cooking the spices.

Next add the chopped tomatoes and salt and cook till the tomatoes are mushy.

Add the prawn and cook for a couple of minutes

Next add the dry roasted coconut and simmer till the prawn and coconut are cooked.

Lastly add the coriander and ghee and fry for one minute.

At this point the curry is ready to be served, however if you want a little gravy you can add a 1/4 cup of water and bring it to a boil.

  1. This is an easy and tasty recipe which my daughter enjoyed cooking for the family. We doubled the quantiles for a family of four, and substituted tinned tomatoes for the fresh ones. Definitely one to enjoy again!
