This is my take on the viral baked feta pasta that took the internet by storm—and honestly, it deserves the hype. Minimal prep, big flavour, and the oven does most of the work. I’ve tweaked it slightly with wholemeal penne and a generous hit of herby goodness.

Ingredients
- 1 block of feta cheese
- Cherry tomatoes, halved
- 3 cloves of garlic
- Olive oil
- A generous sprinkling of dried mixed herbs de Provence
- Wholemeal penne pasta, cooked according to packet instructions
Method
- Preheat the oven to 200°C (180°C fan).
- Place the feta block in the centre of a baking dish. Scatter the halved cherry tomatoes and garlic around it.
- Drizzle generously with olive oil and sprinkle over the mixed herbs de Provence.
- Bake for 30–35 minutes, until the tomatoes are soft and jammy and the feta is golden and creamy.
- Meanwhile, cook the wholemeal penne and reserve a little pasta water.
- Remove the dish from the oven and mash everything together to form a rich, herby sauce.
- Toss through the cooked pasta, loosening with a splash of pasta water if needed.
