Easy Chicken Meatballs

I got this idea from a recipe that popped up on my Instagram feed. I usually make my chicken meatballs with breadcrumbs and Boursin garlic and herb cheese, the influencer used sage and onion stuffing mix instead, so I decided to give it a go. It turned out absolutely fabulous, somehow I think she put the dry stuffing mix with the minced chicken, but I prepared the stuffing per instructions on the box and then added the mince and cheese. Made 51 little meatballs, and served it with roast potatoes, broccoli and gravy. Smash hit in the Mack household.

Ingredients:

  • 500 gms chicken mince (I used 6% fat mince)
  • 2 Boursin Garlic and Herb sections (96gms each)
  • 1 packet sage and onion stuffing mix (170 gms)

Method:

Heat oven to 220 C.

Prepare the stuffing per instructions on the packet and leave it to stand.

Once the stuffing is ready add the mince and cheese and mix well.

Make small meatballs, I could make about 51 small meatballs, feel free to vary it per your liking.

Bake in oven about 25 minutes till nice and brown.

Serve with roast potatoes, steamed vegetables of your choice and gravy!

I have stuck the leftovers in the freezer and will be serving it with pasta and tomato sauce or mushroom sauce, watch this space for updates!
