Easy Rocky Road

I used Rich Tea Biscuits and added mini marshmallows, raisins and mixed nuts and it turned out just liked its pictured on BBC Good Food, very impressed! Just adding the recipe here so I have it all in one place for future reference.

Ingredients:

  • 200 gms Rich Tea Biscuits
  • 200 gms Dark chocolate
  • 135 gms butter (I used Kerrygold salted butter)
  • 100 gms mini marshmallows
  • 100 gms mixed dried fruit and nuts
  • 3 tbsp golden syrup

Method:

Place the digestive biscuits on a freezer bag and bash with a rolling pin into small pieces.

In a pan melt the butter, chocolate and gold syrup, stirring till there are no lumps. I melted it on a low flame to make sure the chocolate didn’t burn. Keep aside.

Once the chocolate mixture is cooled add the biscuit pieces, marshmallows and dried fruit and nuts and mix well.

Line a brownie tin with baking paper and tip the chocolate mixture into it. I also covered it with a piece of baking paper and pressed down to make sure everything is nice and level.

Pop into the fridge for 2 hours, cut into squares and enjoy!!!
