We had a bbq at ours yesterday and this one was a great hit, pics to follow as in all the activity yesterday I forgot about it! This will feed about 10 people so please feel free adjust the quantities depending on how many you are entertaining. The dish allows for scaling up and down. Also substitute paneer with diced chicken to make Chicken Tikka !

Ingredients:

- 2 packets of paneer (about 550 gms) (cubed)
- 300 gms Greek yoghurt
- 1 tbsp ginger paste
- 1tbsp garlic paste
- 1 tbsp cumin and coriander powder (feel free to add one 1 tsp cumin powder and 1 tsp of coriander powder)
- 1/2 tsp kashmiri chilly powered (substitute it with any other mild chilly powder
- 2 tsp Chaat Masala (you will find this is any India store, costs about £1.50 for a packet, and is worth its weight in gold for the flavour it provide)
- Juice of a lemon
- 1 tsp Garam Masala ( again you will find it in any Indian store, if you Indian curries, please invest in one of these packets, feel free to substitute with curry powder)
- 1 tbsp dried mint ( feel free to use fresh mint)
- 1 handful fresh coriander chopped.
- 1 tsp kasuri methi (this is dried fenugreek leaves, optional but gives it a distinctive flavour, I use this a lot when making North Indian dishes and again for £1.50 you will get this big box of the stuff)
- 3 bell peppers ( I used red and green ones), cubed 1 inch pieces
- 2 onions cubed 1 inch pieces
- 1tbsp oil
Method:
Mix all the ingredients to make a marinade
Add the paneer, pepper and onion pieces and mix well to ensure they are well coated with the marinade
Cover and let it sit for at least an hour.
Alternate the paneer, peppers and onion on a skewer.
Cook on bbq for about 10 mins.
