Cous cous salad

Lovely, light salad, perfect to serve as a side dish alongside barbecue meats or it’s good as a main meal too. It is easy to make and takes less than 20 mins including the chopping.

Ingredients

  • 250 gms cous cous
  • 1 bottle roasted tomato and red peppers meze dip (used the one stocked by M&S)
  • 1 onion (chopped finely)
  • 2 tomatoes (chopped finely)
  • 1 cucumber (peeled and finely chopped)
  • 1 bunch of coriander leaves (finely chopped)
  • 1 bunch of flat leaf parsley (finely chopped)
  • 1 tsp cumin powder
  • Juice of one lemon
  • 1 tsp paprika powder
  • Boiling water

Method:

Place the cous cous in a bowl, add paprika, cumin powder, salt and just enough boiling water to cover the cous cous. Keep aside for a minimum of 10 mins.

Meanwhile chop and mix the meze dip, tomato, onion, cucumber, coriander and parsley.

Once the cous cous is ready, fluff with a fork and add the tomato onion mixture.

Add lemon juice and well.

Salad is ready to serve.
