Vegetable Pulav

Simple and healthy Vegetable Pulav that you can prepare in no time.

Ingredients:

  • 1 cup Basmati Rice
  • 1 cup Frozen Mixed Vegetables (I used M&S frozen vegetables-it had, peas, carrots, corn and french beans)
  • 1 tsp cumin seeds
  • whole spices – 4 Cloves, 6 Peppercorns, 1 small piece of Mace, 1 inch Cinnamon, 4 Green Cardamons, 1 Bay leaf)
  • 1 tbsp Ghee
  • 1 1/2 cup Boiling Water
  • Salt to taste

Method:

Wash the rice till the water runs clear (about 4 times). Then soak it in some water an leave aside for a minimum of one hour (I usually soak it for about 1.5 hrs). After 1.5 hrs has elapsed drain the rice with a strainer and keep aside still in the strainer – this will ensure the all the water has drained.

Heat the ghee in a pan and add the whole spices and fry for about 1 minute on medium flame.

Add the cumin seeds and fry for 30 seconds.

Add the vegetables and fry for about a minute and then add the rice and mix well.

Add the water and let it come to a boil, continue boiling for 1 minute.

After 1 minute, cover with lid (ensure it a tight lid so no steam escapes) and reduce to low flame and cook for 7 minutes.

After 7 minutes, switch off the flame and let the rice rest for 10-15 minutes – Do not open the lid for a minimum of 10 minutes, the rice needs to rest.

After 15 minutes has elapsed, remove the lid and fluff the rice.

The rice can now be served with curries, raita or on its own!
