Lamb Lasagne

It’s celebration time, this is my 50th post and I wanted it to be a special post! I made this lasagne over the weekend and must say it’s become the family favourite! It took about three hours and five minutes to make and this recipe makes two lasagne. I made one with breadcrumbs topping and the other with just Parmesan. It is absolutely worth the effort and your family will definitely enjoy this treat.

Ingredients:

  • 800 gms Lamb Mince
  • 250 gms Onions (finely chopped)
  • 3 Celery Sticks (finely chopped)
  • 200 gms Carrots (finely chopped)
  • 100 gms of Datterini tomatoes (cut into 4 pieces, feel free to replace with cherry tomatoes etc)
  • 1/2 bottle of Red Wine (I had a bottle of The Guvnor lying around)
  • 16 no-cook lasagna sheets (I used the Sainsbury pre-cooked lasagna sheets)
  • 240 gms of Mozarella Cheese (shredded)
  • 1 bottle Dolmio Bolognese Sauce
  • 18 tbsp Bisto White Sauce mix
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil
  • Breadcrumbs for topping
  • Parmesan for topping

Method:

Heat one table spoon of oil in a pan and add the minced lamb, salt and pepper to taste.

We want to brown the lamb, it should be done in 10 – 15 minutes.

Remove from flame and keep aside. It will release some water in the process, retain it as we will use I later when preparing the ragu.

Next in the same pan add a table spoon of oil and add the onions, carrots and celery and cook then for about 15 minutes.

Next add the red wine in three batches and reduce.

Once the 3rd batch has reduced add the Dolmio sauce, chopped tomato, browned lamb and the lamb stock and let it simmer for 30 minutes.

Prepare the white sauce by adding the required quantity of water to the white sauce mix.

We start assembling the lasagne, first we put a thin layer of ragu, top it with lasagne sheets, then a layer of ragu, top that with white sauce and place shredded Mozarella on top of the Bechemel sauce, repeat two times, the final layer will be white sauce. Top it will breadcrumbs and parmesan cheese and bake for about 40 minutes.

Serve hot with some salad.
