Leek and Potato Soup

Ingredients:

  • 2 medium Potatoes (cut it into small pieces around 0.5 inch)
  • 1 Leek (Stem only -cut into thin strips)
  • 2 cloves of Garlic (finely chopped)
  • 7-8 Peppercorns
  • 2 pieces of Chicken Salami
  • 3 cups Hot Water
  • Butter

Method:

Heat a pan and add butter, garlic and salt and cook for one minute

Now add the leeks and peppercorn and mix well.

Let it cook for 10- 15 minutes on medium flame, keep stirring occassionally.

Next add the potatoes, salami pieces and hot water and stir well.

Let this cook till the potatoes are done. Remove from heat & let it cool.

At this stage remove the salami and chop it into 1 cm pieces and keep aside.

Blend the cool potato/leek mixture, add hot water if needed.

Return it back on heat add the Salami pieces and mix well.

Adjust the seasoning & add water if needed, ensure the soup consistency is thick.

Bring it to a boil.

Piping hot soup is ready to be served.
