Eggless Oat Pancakes

Mr. Mack has been excited about Shrove Tuesday and pancakes for the past month. So I decided to make some for breakfast today. I like to add Oats as I like to think it makes them every so slightly healthier (after yesterday’s indulgence in Carrot Cupcakes I think we need to be good today). My husband loves his pancakes with marmalade and honey and I like mine with garlic and herb cheese!!

Ingredients:

  • 1/2 cup Rolled Oats
  • 3/4th cup All Purpose Flour
  • 1/2 tbsp Baking Powder
  • 1 tsp Vanilla Essence
  • 1 tbsp sugar
  • a pinch of salt
  • 1 cup skimmed milk
  • 1 tbsp Oil
  • 1 tbsp of water.

Method:

As you can see from the pictures, I like to make the batter in a beaker. That way once its ready all I have to do is pour it onto the pan, no hassle!

So place the oats in the beaker and add half cup of skimmed milk, mix well and we will let it sit for about 10 minutes.

Next mix the flour, baking powder, sugar and salt.

After 10 minutes add the vanilla essence, water and oil to the oats mixture.

At a couple of spoons of the dry mixture at a time into the oats mixture and mix well – this should be about 4 batches.

Add the rest of the milk to the oats mixture and mix well. You should have a free flowing batter.

Heat a pan on medium and pour a little batter and let it cook, till bubbles form on top of it and the sides turn dry, about a minute and 20 seconds. Flip and cook for about 40 seconds.

Pancakes are ready, this recipe will yield about seven pancakes (depends on how much you pour, you could makes slightly smaller ones too).
