Surmai Fry

Surmai or Kingfish is my favorite, I love the round steaks when they are coated with spices, dredged in semolina and shallow fried. My sister Div, is a fantastic cook and has her own twist to the traditional dressing (chilly powder, turmeric powder and salt) here is the recipe in her own words.

Ingredients:

  • 1/2 kg surmai medium pieces -cleaned
  • 1/4 cup coriander leaves
  • 10-12 garlic cloves
  • 1.5 inch piece of ginger
  • 1/2 tsp turmeric powder
  • 1 tsp red chilly powder
  • Juice of 1 lemon juice
  • 1/4 cup semolina
  • 1/4 cup oil for shallow fry
  • salt as per taste

Method:

Grind coriander leaves, ginger ,garlic into a fine paste and remove it in a bowl or plate

To this paste add the turmeric, chilly powder ,lemon juice & salt as per taste and mix well.

Apply this paste on the Surmai pieces and marinate it for around 5 -6 hours or overnight in case of Surmai steak pieces.

Now coat the Surmai pieces in very thin layer of semolina.

Heat oil in a pan and shallow fry the surmai pieces in medium flame for 4-5 minutes on each side.

The surmai steak pieces may take more time to fry.

Drain the excess oil in a kitchen paper towel and serve hot.

This can be served as starters and goes very well with beer.
