Tomato Cheese Croissants

Ever since we have been in lockdown I have missed these lovely savory croissants that you get in Pret a Manger. These may well not be as prefect as the ones you get in Pret but sure come close and at a fraction of the cost, no less.

Ingredients:

  • 4 all butter croissants
  • 2 tomatoes (sliced thinly)
  • Parmesan cheese
  • Salt and Pepper to taste

Method:

Heat the oven to 180°C (mine is a fan oven 200°C in conventional oven).

Arrange 3 slices of tomatoes on each croissant, top with parmesan cheese.

Season with salt and pepper.

Pop in the oven for 15 minutes, 5 minutes into baking increase the temperature to 200°C (mine is a fan oven 220°C in conventional oven).

Keep checking the croissants, when the cheese has melted and some of it has browned nicely take them out of the oven (this is about the 14-15 minute mark).

Serve hot.
