This is a brownie recipe that can’t go wrong…follow it religiously and you will have the most fabulous brownies every time!

Ingredients:
- 128 gms all purpose flour (1 cup)
- 272 gms demerara sugar (1 1/2 cups)
- 40 gms cocoa powder (1/2 cup)
- 3/4 cup melted butter
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla essence
- Handful of walnuts (crushed)
- 4 eggs
Method:
Heat the oven to 175°C (mine is a fan oven, if you are using a conventional oven it should be 195 °C.)
In a bowl mix all the dry ingredients, till well combined.
Add the eggs, butter and vanilla essence and mix well to get a smooth batter. I prefer to mix by hand and ensure you don’t over mix it.
Add the walnuts and mix well.
Pour into baking tray lined with parchment and bake for 30 minutes, if a toothpick inserted comes clean then the brownies are done.
Let it cool for 10 minutes and then cut into squares.
Serve as is or with ice cream.
