I like this recipe because it needs a few ingredients and with or without bacon it is a treat. The pic below is when I made it without bacon.

Ingredients:
- 3 Tomatoes (chopped)
- 65 gms Panchetta ( I use generally M&S Italian Diced Pancetta, this comes packet with two individual servings of 65 gms each)
- 1 Onion (chopped)
- 1/2 cup White Wine
- Parmesan Cheese (grated)
- Salt and Pepper to taste
- Olive Oil
- Cooked Spaghetti
Method:
If using bacon, then fry the bacon in some olive oil until crisp, remove the fried bacon and keep aside.
Next in the same oil fry the onion until translucent.
Add the white wine and cook till the wine is reduced by half. Keep stirring and scrape the tiny bits of bacon stuck to the bottom of the pan.
Add the tomatoes and bacon and cook until the tomatoes turn mushy.
Check and adjust the seasoning (salt and pepper).
Add cooked spaghetti and Parmesan cheese and mix well.
Garnish with coriander leaves or parsley and serve hot.
