Spicy Scrambled Eggs (Bhurji)

This is a simple dish you can rustle up in 20 mins flat. Only three main ingredients needed and you will most definitely have them in your fridge/ pantry. I usually make this when I need to put together a meal in next to no time. It can be served with rice, bread, chapaties or flat breads!

Ingredients:

  • 3 Eggs
  • 1 Onion (chopped finely)
  • 2 Tomatoes (chopped finely)
  • 1 tsp Chilly Powder
  • 1/2 tsp Turmeric Powder
  • 1 tbsp Oil
  • Salt to taste
  • Coriander leaves for garnish

Method:

Heat the oil in a pan and add the onions, on medium flame. Keep stirring and we want to slightly brown the onions.

Once onions start changing colour add the chopped tomatoes and cook till they turn mushy. Keep stirring at regular intervals.

Keep cooking till the water released by the tomtoes is reduced by half, then add the turmeric, salt and chilly powder and mix well.

I prefer to add the eggs one at a time and incorporating it into the onion tomato mixture. Once all eggs have been added, keep stirring vigorously till the eggs are cooked.

Garnish with chopped coriander leaves and serve with rice, bread or chapatis.
