Ash Gourd Curry

This is one of my top favorite curries, easy to make and healthy! With as few as four main ingredients!

Ingredients

  • 1/2 an Ash Gourd
  • 1 green chilly (you can increase or decrease the chillies based on how spicy you want the curry)
  • 1/2 cup dessicated coconut (you can also use freshly grated coconut)
  • 1 cup Yoghurt
  • Ghee (or oil for tempering)
  • 1/2 tsp cumin seeds
  • curry leaves

Method:

Remove the skin and seeds of the gourd and cut into 1inch pieces. I usually buy the whole ash gourd and make two curries over two weeks.

Place in a pan, add 1/2 cup water and boil it.

Add the chilly, dessicated coconut and about 1/4 cup of water in a mixer jar and grind to a fine paste.

Add the chilly coconut paste to the gourd and let it cook for about 10-15 minutes.

Next we prepare the tempering, heat the ghee in a small pan and add the cumin seeds and curry leaves. Tip this into the gourd curry.

Just before serving, add about 2 tbsp (or more if you like yoghurt) of yoghurt to each bowl of curry and mix well.

This curry is excellent with rice.
